TOWN HALL MEETING
Dear Members,

On WEDNESDAY, SEPTEMBER 8TH AT 6PM, we will be holding a Town Hall meeting to discuss the current state of “Our OCC”. A letter outlining our current position will be emailed prior to the Town Hall meeting for your review. This is an extremely
important meeting as you will see from the information we will be sending you shortly so please mark your calendar to be there.

I look forward to seeing everyone that can make it. The chef will have a buffet after the meeting so if you plan on staying, please let us know when you arrive. You can also call us with your reservation, this helps Greg staff properly for the evening. Thank you!

personally thank the staff for their time and extra
efforts in helping us accomplish our production goals in August. A special thanks goes out to Bryce
Alvarado and John Schmidt we appreciate you holding things together during the week we served close to 1500 meals as temperatures soared in the kitchen to well over 115 degrees as my food thermometer read at the back kitchen prep table.

Wisconsin Consumer Advisories  
   
Wisconsin food safety agencies advise that eating raw or undercooked meat, poultry, eggs, or seafood poses a health risk to everyone, expecially to the elderly, young children under age four, pregnant women, or other highly susceptible individuals with compromised immune systems.
OCC used the following:
- Raw shellfish
- Meat items between rare and medium
- Desserts made with shell eggs (mousse, meringue, etc.)
- Caesar dressing (made with raw eggs)
- Eggs when requested cooked sunnyside up, soft boiled, or soft poached
 

 
Steak Doneness: The Touch Test  
   
Nature's best tool is only an arm's length away: It's your hand. While temperatures are crucial for warding off foodborne illness, the texture of beef is key for great taste. The best way to test the texture of meat is by touching it. If it feels very tender, it's rare; if it resists your finger slightly, it's medium-rare; firm meat is well-done.
